Being a raw food chef, kale is actually a huge staple in most of my recipes. This is where two of my worlds collide. I massage my kale before I prepare it in a recipe. What the what? Yes, indeed! Go ahead, get your hands all up and in your kale. By doing this you are breaking down the cellulose structure and it actually takes away the bitterness taste. You will see it change colors and slightly wilt. This process also makes it easier to digest too. In my world not only do my clients get a massage, my food does too!
